Cottage Cheese Pancakes
You could use ricotta instead of cottage cheese for these yummy, low-cal, protein-packed pancakes that my mum used to make for my roly-poly dad. I usually leave out the wheat bran or wheat germ and usually don’t include cinnamon
1 cup cottage cheese
1/4 cup all-purpose flour
2 tbsp wheat bran or wheat germ (optional)
1/4 tsp cinnamon
Pinch of salt
Butter or oil for lightly greasing skillet
In bowl, combine cottage cheese, eggs, flour, bran, cinnamon and salt.
Grease skillet and place over medium heat. When hot, add spoonfuls of pancake batter; flatten gently with spoon. Cook about 6 to 8 minutes, turning once, until golden brown.
Serve with maple syrup, applesauce, yogurt or garnish of choice.
Makes about 6 medium pancakes.
