6 tbsp granulated sugar
1 large egg
1¼ cups sliced almonds (blanched or unblanched)
Preheat the oven to 325F. Line two baking sheets with parchment paper.
Whisk in medium bowl sugar and egg together until well blended. Add almonds; stir or whisk until evenly coated with the mixture. You need to use the batter right away.
Each cookie needs 2 teaspoons of batter. Scoop batter onto baking sheets leaving 2 inches of space between mounds of batter. Flatten mounds with the back of fork.
Bake in oven for about 20 minutes, rotating pans midway through baking. Transfer baking sheets to wire racks; cool for about 10 minutes. Carefully lift cookies with a spatula.
Makes about 20 cookies.
